Daryl gave me her recipe for Thai Chicken so last night I tested it out on the family...
Miraculously 8 out of 8 loved it!
Here is the recipe for anyone who would like to try it...
Thai Chicken
4 whole chicken breasts, steamed and cubed. Set aside.
Combine the following 5 ingredients in a large pan and mix well, cook until peanut butter is thoroughly broken down. Add chicken pieces.
2 cups chicken broth
4 Tb. soy sauce
8 Tb. chunky peanut butter
2 cloves garlic
Red pepper flakes, to taste (I use McCormick's "Hot Shot" Black and Red Pepper Blend. It's potent, so add 1/4 to 1/2 tsp. and then increase according to taste.
Serve over hot steamed rice with any or all of the following condiments:
peanuts, finely chopped
coconut, toasted in oven
crushed pineapple, canned
mandarin oranges, canned
red, green, and yellow peppers, diced
green onions, thinly sliced
raisins or craisins
